Scott welliver's washington apple cake

Ingredients

3cupsFlour
1teaspoonSoda
1teaspoonSalt
1teaspoonCinnamon
pinchNutmeg
cupOil
4Eggs
1teaspoonVanilla
3cupsApples, red; chopped (do not peel)
1cupWalnuts; chopped
1pintCream, whipping; whipped
Sugar, powdered; to taste (for sweetening cream)

Directions

In large bowl of mixer, sift together dry ingredients. With mixer on slowest speed, add oil. At medium speed, add eggs one at a time, beating well after each addition. Add vanilla. Stir in the apples and walnuts. Turn batter into a greased tub pan. Bake at 350øF for 1 hour or until toothpick comes out clean. Cool 10 minutes in pan and turn out on plate. Serve with sweetened whipped cream.
