Scott welliver's washington apple cake

Yield: 12 servings

Measure Ingredient
2 cups Sugar
3 cups Flour
1 teaspoon Soda
1 teaspoon Salt
1 teaspoon Cinnamon
\N pinch Nutmeg
1½ cup Oil
4 \N Eggs
1 teaspoon Vanilla
3 cups Apples, red; chopped (do not peel)
1 cup Walnuts; chopped
1 pint Cream, whipping; whipped
\N \N Sugar, powdered; to taste (for sweetening cream)

In large bowl of mixer, sift together dry ingredients. With mixer on slowest speed, add oil. At medium speed, add eggs one at a time, beating well after each addition. Add vanilla. Stir in the apples and walnuts. Turn batter into a greased tub pan. Bake at 350øF for 1 hour or until toothpick comes out clean. Cool 10 minutes in pan and turn out on plate. Serve with sweetened whipped cream.
