Fresh apple cake #1

Yield: 15 Servings

Measure Ingredient
2 Eggs; beaten
1¼ cup Oil
1 teaspoon Vanilla
3 cups Fresh; chopped apples
3 cups Flour
1½ teaspoon Soda
½ teaspoon Salt
2 cups Sugar
2 teaspoons Cinnamon
1 teaspoon Nutmeg
1 cup Chopped pecans

In mixer blend eggs, oil & vanilla. Add apples. Add sugar, flour, soda, salt, cinnamon & nutmeg. Mix well. Add chopped nuts. Pour into greased & floured bundt or tube pan. Bake at 350 for 1 hour to 1 hour 15 minutes or until done. This cake may be baked in 3 small, long pans. Freezes well.
