Ingredients

| 1½ | cup | Wesson oil |
| 2 | cups | Sugar |
| 2 | Whole eggs | |
| 3 | cups | Fresh apples; chopped |
| 1 | cup | Pecans; chopped (optional) |
| ½ | can | Flaked coconut (optional) |
| 1 | teaspoon | Soda |
| 1 | teaspoon | Cinnamon |
| 1 | teaspoon | Salt |
| 3 | cups | Sifted flour |
| 2 | teaspoons | Vanilla |
Directions
Mix oil and sugar; add eggs and beat. Add apples and mix well. Sift flour with soda, cinnamon and salt. Add to the apple mixture. Then add vanilla, pecans and coconut. Pour batter into a loaf pan; bake at 300 degrees for 1 hour and 20 minutes. This is a nice Christmas cake -- takes the place of fruit cake -- not as rich.
Variations; Add 1 cup chopped dates. A tube pan may be used.
