Measure | Ingredient |

1½ cup | Wesson oil |
2 cups | Sugar |
2 \N | Whole eggs |
3 cups | Fresh apples; chopped |
1 cup | Pecans; chopped (optional) |
½ can | Flaked coconut (optional) |
1 teaspoon | Soda |
1 teaspoon | Cinnamon |
1 teaspoon | Salt |
3 cups | Sifted flour |
2 teaspoons | Vanilla |
Mix oil and sugar; add eggs and beat. Add apples and mix well. Sift flour with soda, cinnamon and salt. Add to the apple mixture. Then add vanilla, pecans and coconut. Pour batter into a loaf pan; bake at 300 degrees for 1 hour and 20 minutes. This is a nice Christmas cake -- takes the place of fruit cake -- not as rich.
Variations; Add 1 cup chopped dates. A tube pan may be used.
