Fresh apple cake #3

Yield: 12 Servings

Measure Ingredient
2 \N Eggs
2 cups Sugar
1½ cup Oil
1 teaspoon Vanilla extract
3 cups Sifted all-purpose flour
¼ teaspoon Salt
1 teaspoon Baking soda
1 teaspoon Baking powder
1 teaspoon Cinnamon
1 teaspoon Nutmeg
2½ cup Finely chopped apples
½ cup Apple juice
1½ cup Powdered sugar
1 \N Lemon; grated rind & juice of


1. Grease and flour a tube pan. 2. In a large mixing bowl, beat together the eggs, sugar, oil and vanilla.

Sift together the flour, salt, soda, baking powder, cinnamon and nutmeg.

Add to sugar and egg mixture and beat until well blended. Stir in apples.

3. Bake about 1-½ hours at 300 degrees.

4. Prepare the glaze and pour over the cake while it is warm. GLAZE: 1. In a saucepan, heat apple juice and add sugar, lemon juice and rind; beat until smooth.
