Scannels' soda bread

Ingredients

cupWhole wheat pastry flour
1cupOat bran
teaspoonBaking powder
¼teaspoonBaking soda
¼teaspoonSalt
1tablespoonSugar or other sweetener
2tablespoonsCaraway seeds
¼cupRaisins or currants
1cupPotato or soy milk
1tablespoonLemon juice

Directions

Mix milk and lemon juice and set aside. Mix dry ingredients well, then blend in caraway seeds and currants. Add milk stirring to make a stiff dough. Turn into a lightly floured board and knead for 1 minute. Shape into a round loaf and put into a greased 8" round pan. With a floured knife, cut a cross into the top. Bake at 350F for 40 minutes or until lightly browned.
