Sourdough soda bread

Yield: 6 servings

Measure Ingredient
2 cups Whole wheat flour
2 cups All-purpose flour
1 teaspoon Baking powder
1½ teaspoon Baking soda
1 tablespoon Sugar
1 pinch Salt
1 tablespoon Honey
1 tablespoon Pure maple syrup
1 teaspoon Dried basil
¼ teaspoon Dried thyme
1 cup Sourdough starter
1 cup Buttermilk

Combine in a large bowl the whole wheat flour, the all-purpose flour, the baking powder, the baking soda, salt, and sugar and stir well Mix the sourdough starter and buttermilk together in a one quart cup and blend in the honey, maple syrup, basil and thyme Pour this liquid mixture into the large bowl containing flour; stir and knead until a dough forms

Turn onto a floured surface and knead a few times Form into a round loaf and slit the top several times Place a pan of water on the lowest rung of the oven; preheat the oven to 400 degrees

Place the dough on a non-stick baking pan sprinkled with corn meal and place it in the oven directly above the pan of water; bake for 30 minutes at 400 degrees.
