Savoy cabbage slaw with prosciutto dressing

Ingredients

¼cupOlive oil
8Thin slices prosciutto,diced
2Shallots, chopped
¼cupCider vinegar
1tablespoonLiquid honey
2tablespoonsChopped fresh parsley
¼teaspoonPepper
4cupsThinly sliced Savoy cabbage
1Carrot, peeled and grated
2Green onions, chopped

Directions

Heat olive oil in a skillet over medium heat. Add prosciutto and cook for 2 minutes until shrivelled. Add shallots and cook for 1 minute.

Remove pan from heat. Stir in vinegar, honey, parsley and pepper.
