Prosciutto di san daniele with apple salad

Ingredients

½poundsSan Daniele prosciutto, thinly sliced
1Granny Smith apple, peeled and cored
1Macintosh apple, peeled and cored
1Golden Delicious apple, peeled and cored
1tablespoonPoppy seeds
3tablespoonsExtra virgin olive oil, preferably, from Yugoslavia
1tablespoonRed wine vinegar
1Head radicchio di Treviso (long radicchio), leaves detached

Directions

Place prosciutto on a large platter. Julienne all apples and place in a mixing bowl. Add poppy seeds, olive oil, vinegar and radicchio and salt and pepper to taste and toss to coat. Arrange salad in center of plate and surround with grilled bread. Serve immediately.

Yield: 4 servings
