Savoy cabbage with smoked bacon and shiitake mushrooms

½tablespoonVegetable oil
1ounceSliced shiitake mushrooms
1teaspoonMinced shallots
Salt to taste
Fresh ground pepper to taste
3ouncesCabbage leaves
½teaspoonWhite vinegar
1teaspoonButter; (optional)
1teaspoonSliced chives

Directions

Heat a saucepan over a high heat. Add the bacon, toss until lightly brown.

Add the oil, then the mushrooms, toss until lightly brown, add the shallots and season to taste. Add the cabbage leaves, toss the vinegar. Add the vinegar. Add the butter (optional). Adjust the seasoning. Then add chives-serve immediately.
