Salsa de chile guero

Ingredients

| 1 | each | tomato, peeled & seeded |
| 6 | eaches | sprigs cilantro, chopped |
| 1 | each | small onion, chopped |
| 1 | each | clove garlic, crushed |
| 1 | each | canned serrano, chopped |
| 3 | tablespoons | oil |
| 1 | each | salt, pepper to taste |
| 1 | each | pinch sugar |
Directions
Simmer gueros in boiling water for 5 minutes. Drain, stem and seed. Puree with remaining ingredients. Cook in skillet, stirring constantly, 2-3 minutes. Makes 1½ cups
