Green chile salsa

Ingredients

¾poundsTomatillos
½smallOnion; finely chopped
1Serrano chile; finely chopped
1smallYellow chile; finely chopped
2teaspoonsFreshly-squeezed lemon juice
2mediumsGarlic cloves; minced
2tablespoonsChopped cilantro
½teaspoonSalt

Directions

Put tomatillos into a pan with water to cover and bring to a boil. Simmer gently for 10 minutes. Drain, cool, and core. Cut tomatillos into small dice or finely chop in a food processor fitted with the steel blade. Place in bowl. Add remaining ingredients and mix well. Cover and refrigerate.

This recipe yields 2½ cups of salsa.
