Green chile salsa

Ingredients

¾ | pounds | Tomatillos |
½ | small | Onion; finely chopped |
1 | Serrano chile; finely chopped | |
1 | small | Yellow chile; finely chopped |
2 | teaspoons | Freshly-squeezed lemon juice |
2 | mediums | Garlic cloves; minced |
2 | tablespoons | Chopped cilantro |
½ | teaspoon | Salt |
Directions
Put tomatillos into a pan with water to cover and bring to a boil. Simmer gently for 10 minutes. Drain, cool, and core. Cut tomatillos into small dice or finely chop in a food processor fitted with the steel blade. Place in bowl. Add remaining ingredients and mix well. Cover and refrigerate.
This recipe yields 2½ cups of salsa.
