Ingredients

6cupsDiced tomatoes
6Hot green peppers; minced
cupWhite wine vinegar
1Garlic clove; minced
Parsley
4cupsGreen peppers
cupOlive oil or vegetable oil
½teaspoonSalt
¾poundsFeta or Provolone cheese cut into cubes

Directions

Place tomatoes, green peppers and hot peppers in a large bowl.

Combine oil, vinegar, salt and garlic; pour over tomato mixture and toss. Top with cheese. Garnish with parsley. To serve, toss cheese cubes with tomato mixture.
