Rice-no-roni (non-gluten)

Ingredients

QuantityIngredient
2cans(small) diced cooked chicken (or 1 and 1/2 cup diced cooked chicken)
cupUncooked rice (I use uncle Ben's long grain)
2tablespoonsButter or margarine
cupHot water
1cupFrozen peas
1canSliced mushrooms (or 1 cup fresh)
1canSliced water chestnuts - rinsed & drained
1canCooked sliced carrots (optional)
1Seasoning packet from a regular box of chicken Rice-a Roni*

Directions

Saute rice in butter until it turns white. Add remaining ingredients, and stir. Bring to a boil. Cover tightly, and simmer for 20 min, or until done.

Makes 7 cups. Freezes well
