Rice-no-roni (non-gluten)

Yield: 1 Servings

Measure Ingredient
2 cans (small) diced cooked chicken (or 1 and 1/2 cup diced cooked chicken)
2½ cup Uncooked rice (I use uncle Ben's long grain)
2 tablespoons Butter or margarine
5½ cup Hot water
1 cup Frozen peas
1 can Sliced mushrooms (or 1 cup fresh)
1 can Sliced water chestnuts - rinsed & drained
1 can Cooked sliced carrots (optional)
1 \N Seasoning packet from a regular box of chicken Rice-a Roni*

Saute rice in butter until it turns white. Add remaining ingredients, and stir. Bring to a boil. Cover tightly, and simmer for 20 min, or until done.

Makes 7 cups. Freezes well
