|¼ cup||Olive oil|
|1 medium||Onion; chopped|
|4||Garlic cloves; minced|
|2 tablespoons||Parsley; chopped|
|2 cups||Quick Brown Rice|
|Salt and pepper to taste|
|½ cup||Parmesan cheese|
|¼ cup||Olives, sliced (green or black)|
Saute' vegetables and seasonings in olive oil. Stir rice and vegetables into a rectangular casserole dish, and pour water on top.
Bake at 400 F. for 45 minutes; remove and sprinkle with cheese and olives; cover and return to oven for an additional 10 minutes.
