Rice pudding brulee

Ingredients

| 100 | grams | Pudding rice |
| 50 | grams | Sugar |
| 2 | tablespoons | Custard powder |
| 1 | Lemon; zest of | |
| 1 | litre | Sweetened soya milk |
| Icing sugar | ||
Directions
Place all the ingredients except the icing sugar in a cast iron saucepan and place on a very low heat for 1½ hours. Stir every 15 minutes.
Put the cooked rice mixture into ramekins and cover with icing sugar. Place the ramekins under the grill or use a blow torch to caramelise the sugar.
Serve immediately.
