Rice pudding 4

Yield: 8 servings

Measure Ingredient
½ cup Rice
1 quart Milk
⅓ cup Butter
3 eaches Eggs, beaten
½ cup Sugar
1 teaspoon Vanilla
¼ teaspoon Salt
1 x Cinnamon

Mix rice with 2 cups of the milk in top of a double boiler. Cook over hot water until tender. Add butter. Combine eggs, sugar, vanilla, salt and remaining milk. Stir into hot rice mixture. Pour into a greased 1-½ quart baking dish. Sprinkle with cinnamon. Set in pan and fill half full of warm water. Bake in a moderately low oven 325 for 25 minutes or until set.
