Yield: 2 cups
|1 large||Bell pepper, green|
|½ large||Onion, red|
Peel and seed tomato and cut into ⅛-inch dice. Seed green pepper and cut into ⅛-inch dice. Cut onion into ⅛-inch dice. Combine tomato, pepper and onion in bowl. Add vinegar just to cover and salt and pepper to taste. Chill. (Can be prepared 1 day ahead.) A few hours before serving, drain well. Serve chilled or at room temperature.
