Red onion relish - country living

Ingredients

| ¼ | cup | Olive oil |
| 2 | pounds | Large red onions, sliced & separated into rings |
| ¼ | cup | Red-wine vinegar |
| 2 | tablespoons | Sugar |
| ½ | teaspoon | Salt |
| ¼ | teaspoon | Ground white pepper |
Directions
In large skillet, heat oil over medium heat. Add onions and saute 5 minutes. Reduce heat to low, cover and cook onions 15 minutes or until tender, stirring occasionally.
Stir vinegar, sugar, salt and pepper into onions. Cook 5 minutes longer or until mixed. Transfer to serving dish and serve warm or at room temperature.
