1 teaspoon | Orange zest, finely grated |

1. Lightly spray a medium non-stick skillet with cooking spray and heat. Add the onion and cook over moderate heat until caramelized, about 6 minutes. Add the garlic and stir for 1 minute. Add the port and simmer, stirring, for 10 minutes.
2. Add the red wine, orange juice, honey, vinegar, orange zest, and salt and simmer until the liquid is reduced and the onions are very soft, about 15 minutes. Let cool, cover and refrigerate for up to 2 days. Return to room temperature before serving. Use to top hamburgers or as an accompaniment to grilled meat or poultry.
