Pumpkin seed salsa (salsa pepitas)

Measure Ingredient
1 cup Cooked corn kernels
1½ cup Chopped tomatoes
1 Green Anaheim chili; toasted and chopped
1 Serrano or jalapeno chili toasted and

3 tablespoons Fresh lime juice; up to 4
⅓ teaspoon Ground cumin
1 cup Unsalted green pumpkin seeds toasted
Salt and pepper to taste

In a mixing bowl, mix together the corn, tomatoes, chiles, lime juice and cumin. Stir in the pumpkin seeds and add the salt and pepper to taste 1 Salsa
