2tablespoonsBlack pepper; freshly cracked
2tablespoonsSalt
2tablespoonsWhite vinegar
2tablespoonsYellow mustard
2tablespoonsJalapeno pepper; minced
2tablespoonsOlive oil

Directions

Combine all ingredients and mix well. Use within two days of preparing.

Rub pork butt with spice mixture and smoke for 1½ hours per pound at 240-250F.
