Powter apple fritters

Yield: 4 servings

Measure Ingredient
3 mediums Apples; peeled, cored and cut into 1/4 inch rounds
1 cup Whole wheat flour
1 teaspoon Baking powder
¼ teaspoon Salt
¼ teaspoon Cinnamon
1 large Egg
1 cup Apple juice
1 tablespoon Vegetable oil

Dry apples with paper towel and set aside. Apples need to be dry or batter will not stick.

Mix flour, baking powder, salt, and cinnamon in a bowl.

In a separate bowl, beat egg, juice, and 1 1/4t of veg oil. Mix wet and dry ingredients together until there are no lumps.

In a nonstick pan, heat 1/2t oil. Dip apples in batter and let excess drip off. Saute slices a few at a time. Cook until golden, turn and brown the other side. Continue until all the apples are done. Drain on paper towels.
