Potato basque soup

½ | cup | Chopped onion |
2 | cans | (16oz each) tomatoes |
4 | White potatoes; pared and diced, (6 C) | |
¼ | cup | Chopped parsley |
1 | cup | Diagonally sliced celery |
2 | tablespoons | Chopped celery leaves |
1½ | cup | Water |
2 | Beef bouillion cubes | |
1 | Bay leaf | |
1 | tablespoon | Salt |
½ | teaspoon | Dried leaf thyme |
¼ | teaspoon | Pepper |
1 | tablespoon | Lemon juice |
Directions
In large saucepan or kettle, brown sausage over medium heat. Add onion and cook 5 minutes. Add remaining ingredients. Bring to a boil, reduce heat and simmer uncovered 40 minutes or until potatoes are tender. Serves 6 Posted to brand-name-recipes by Geo & Donna <gstratio@...> on Feb 3, 1998
