Potato basque soup

Measure Ingredient
1 pounds Italian sausage; sliced
½ cup Chopped onion
2 cans (16oz each) tomatoes
4 \N White potatoes; pared and diced, (6 C)
¼ cup Chopped parsley
1 cup Diagonally sliced celery
2 tablespoons Chopped celery leaves
1½ cup Water
2 \N Beef bouillion cubes
1 \N Bay leaf
1 tablespoon Salt
½ teaspoon Dried leaf thyme
¼ teaspoon Pepper
1 tablespoon Lemon juice

In large saucepan or kettle, brown sausage over medium heat. Add onion and cook 5 minutes. Add remaining ingredients. Bring to a boil, reduce heat and simmer uncovered 40 minutes or until potatoes are tender. Serves 6 Posted to brand-name-recipes by Geo & Donna <gstratio@...> on Feb 3, 1998
