Polonaise butter

Yield: 4 Servings

Measure Ingredient
½ cup Dry bread crumbs
4 \N Fluid ounces meuniere
\N \N Butter -- See Recipe
2 \N Hard-boiled eggs -- chopped
\N \N Fine
\N \N Salt and pepper -- to taste

Brown the bread crumbs slightly in the butter. Add the eggs and season with salt and pepper if needed. Pour over vegetables or pasta.
