FOR THE SAUCE
Place the water, sugar, bay leaves, lemon rind and cinnamon stick in a large saucepan and allow to simmer gently. Meanwhile, peel the pears carefully, leaving the stalk intact. Put the pears into the simmering liquid and poach gently until the pears are translucent, about 30 minutes.
Place the brown sugar and butter in a heavy saucepan and bring to the boil.
Add the cream while whisking to incorporate. Allow the sauce to cool slightly, then dip each pear into the sauce, and serve with extra sauce and cream.
If you prefer, you can place the plain pear on a plate and pour the sauce over the top.
