Red poached pears

Yield: 4 servings

Measure Ingredient
4 Bosc pears
1 cup Merlot; (up to 2)
2 tablespoons Fresh lime juice
1 cup Brown sugar
1 Stick cinnamon
½ Lemon; Zest of
½ Lime; Zest of
1 Vanilla bean
½ pint Heavy cream; gently whipped

Peel the pears without removing the stems and place them in a deep sauce pan. In another sauce pan, bring the merlot, lime juice, brown sugar, zests, vanilla bean, and enough water to cover the pears to a boil. Pour the liquid over the pears and simmer very slowly until just tender (10 to 15 minutes). Remove the pears carefully to a serving dish. rapidly reduce the remaining liquid by boiling down to about a cup. Pour over pears.

Present on a bed of whipping cream sprinkled with cinnamon.

Yield: 4 servings.
