Pinto bean cake

Yield: 8 Servings

Measure Ingredient
½ cup Margarine
2 cups Sugar
2 \N Eggs
2 cups Refried beans or pinto beans
½ cup Chopped nuts
1¼ cup Flour
½ teaspoon Baking powder
1 teaspoon Each cinnamon & soda
½ teaspoon Each cloves & allspice
1 cup Brown sugar
¼ cup Milk
1 \N Stick margarine
1 teaspoon Vanilla


Cream margarine, eggs & sugar. (If using pinto beans, put them through a blender). Add beans to creamed mixture alternately with sifted dry ingredients. Add nuts. Bake in greased & floured 9x13-inch pan 1 hour or until done. Glaze. Glaze: Mix sugar, milk & butter in heavy saucepan. Boil 5 minutes, stir in vanilla. Pour over hot cake.
