Pineapple bread pudding

Yield: 4 - 6 folks

Measure Ingredient
½ cup Margarine; softened =OR=-
½ cup Butter softened
1 cup Sugar;
½ teaspoon Ground cinnamon;
4 \N Eggs;
1 can Crushed pineapple; well well drained
2 cups 1/2\" bread cubes; (about 3 slices
¼ cup Pecans; chopped

Heat oven to 325 degrees; in large mixer bowl, beat margarine, sugar and cinnamon on medium speed 1 minute, scraping bowl constantly. Add eggs, scraping occasionally; beat on high speed until mixture is light and fluffy, 2 minutes. Fold in pineapple, bread cubes and pecans. Pour into greased 1-½ quart casserole.
