Pineapple and bananas with coconut syrup

1cupBrown rice syrup
1cupWater
1cupCoconut milk
2teaspoonsRosewater, optional
2cupsPineapple, peeled & chopped
2cupsCantaloupe, seeded & cubed
2Bananas, sliced

Directions

In a medium sized pot, combine syrup & water. Bring to a boil, reduce heat & simmer until the mixture thickens slightly, about 15 minutes. Remove from heat. Stir in coconut milk & rosewater & chill for 1 to 2 hours. Arrange fruit in a large serving bowl. Pour syrup over the top & serve slightly chilled or at room temperature.
