Pimento cheese sandwich filling

Yield: 10 Servings

Measure Ingredient
1 can (5.125-oz) evaporated milk
½ pounds Processed American cheese; diced
1 can (3-oz) pimientos
¼ teaspoon Salt
\N \N Pickles (optional)
\N \N Chopped olives (optional)
\N \N Grated onion (optional)

Put milk into top of double boiler. Add diced cheese, and keep hot until melted. Drain pimientos and mash. Add to cheese and milk with the salt.

Pickles, chopped olives, or grated onion may be added, if desired. Yield: 1-¾ cups or filling for 10 sandwiches.
