Pear and raspberry compote

2tablespoonsConcentrated apple juice
¼teaspoonVanilla essence
1smallCart Greek yoghurt
2tablespoonsPumpkin seeds; toasted

Directions

1. Place the fruit, apple juice and vanilla essence in a small pan. Bring to the boil, then simmer for 15-20 minutes until the pears are just soft.

Leave to cool then chill. To serve, divide the compote into individual portions, top with yoghurt and scatter with pumpkin seeds to finish Converted by MC_Buster.

NOTES : Healthy puddings can be as delicious as creamy, cholesterol-filled concoctions. Serve this dessert chilled or just warm on colder days.
