Peach pops~

Yield: 4 servings

Measure Ingredient
3 mediums Ripe peaches, peeled, pitted and sliced (about 1 1/2 cups)
1 cup Skim milk
¼ cup Pineapple juice
2 teaspoons Grated lemon peel
1 teaspoon Lemon juice
1 teaspoon Vanilla

Prep Time: 10 min. Freezing Time: 9 hr. Standing Time: 5 min.

In blender or food processor, blend or process all ingredients until smooth. Pour the mixture into 4 (6 to 8 ounce) paper cups. Cover with foil and freeze until partially frozen. Insert a wooden stick in the center of each and freeze at least 8 hours or until completely frozen. To serve, let the pops stand at room temperature for 5 minutes. Then gently peel the paper cup from the frozen pop.

NOTE: You can prepare these pops with other fruits such as apricots, strawberries or bananas.

Makes 4 servings.

Per serving: 63 calories; ⅕ g fat (3% of calories); 1 g fiber; 1 mg cholesterol; 32 mg sodium.
