Yield: 4 servings
|4 eaches||Peaches; peeled diced*|
|2 teaspoons||Vanilla OR|
|1 teaspoon||Almond extract|
|2 larges||Scoops vanilla ice cream (2/3 cup)|
|Fresh peach slices|
Combine diced peaches and vanilla (or almond extract) in blender; whirl until smooth. Add ice cream and whirl just until smooth. Pour into glasses. Garnish with fresh mint and peach slice.
*Note: To peel peaches, plunge into boiling water for 30 seconds.
Remove immediately and plunge into ice water. Skin should slip off easily.
