Peach alexander

Yield: 4 servings

Measure Ingredient
4 eaches Peaches; peeled diced*
2 teaspoons Vanilla OR
1 teaspoon Almond extract
2 larges Scoops vanilla ice cream (2/3 cup)
Fresh mint
Fresh peach slices

GARNISH

Combine diced peaches and vanilla (or almond extract) in blender; whirl until smooth. Add ice cream and whirl just until smooth. Pour into glasses. Garnish with fresh mint and peach slice.

*Note: To peel peaches, plunge into boiling water for 30 seconds.

Remove immediately and plunge into ice water. Skin should slip off easily.
