Pauls bacon and potato pie

Yield: 9 Servings

Measure Ingredient
1 pounds Bacon
1 medium Onion -- chopped
8 Eggs
1 pounds Potatoes -- grated
2 cups Cheddar cheese -- grated
½ teaspoon Seasoned pepper

Grease a 9x13 inch baking dish. Whisk eggs until foamy. Chop the bacon into pieces. In a frying pan, brown the bacon until crisp. Drain and blot on paper toweling. Combine the bacon and the remaining ingredients. Spread the mixture evenly in the prepared baking dish. Bake in a 350 oven for 45 minutes. Cut into squares. Source: five Gables Inn Recipe By :
