Pasta with bacon and walnuts

| 50 | millilitres | Olive oil |
| 250 | grams | Smoked bacon cut into strips |
| 2 | Cloves garlic - peeled and crushed | |
| 1 | Onion; chopped | |
| 75 | grams | Walnuts - chopped roughly |
| 450 | grams | Plum tomatoes; skinned and diced |
| 4 | tablespoons | Flat leaf parsley; chopped |
| 1 | Lemon; rind of | |
| 250 | grams | Soft cheese - ie goat's cheese; cubed |
Directions
1 Cook the spaghetti in a pan of boiling salted water. Heat the oil in a large frying pan. Fry the garlic and onion for 3-4 minutes, afterwards adding the bacon and continuing to cook for a further five minutes.
2 Stir in the walnuts, tomatoes, parsley and lemon rind. Heat gently until piping hot and season. Drain the pasta, place back in the pan and heat through.
3 Toss the pasta with the bacon sauce. When serving, top with little cubes of goat's cheese and sprinkle with a little extra parsley.
