Papaya-watermelon salsa - bon appetit

Ingredients

1 | cup | Diced peeled seeded papaya |
½ | cup | Diced seeded watermelon |
¼ | cup | Diced English hothouse cucumber (unpeeled) |
¼ | cup | Minced red onion |
3 | tablespoons | Fresh lime juice |
2 | tablespoons | Chopped fresh cilantro or basil |
2 | teaspoons | Olive oil (preferably extra-virgin) |
1 | teaspoon | Minced seeded jalapeno chili |
Directions
Combine all ingredients in medium bowl. Season with salt and pepper.
(Can be made 1 hour ahead. Cover and chill.) NOTE: Good topper for grilled mahimahi, swordfish, tuna or salmon.
For the freshest flavor and texture, serve the salsa within 1 hour of preparing it.
