Papaya-watermelon salsa - bon appetit

Ingredients

1cupDiced peeled seeded papaya
½cupDiced seeded watermelon
¼cupDiced English hothouse cucumber (unpeeled)
¼cupMinced red onion
3tablespoonsFresh lime juice
2tablespoonsChopped fresh cilantro or basil
2teaspoonsOlive oil (preferably extra-virgin)
1teaspoonMinced seeded jalapeno chili

Directions

Combine all ingredients in medium bowl. Season with salt and pepper.

(Can be made 1 hour ahead. Cover and chill.) NOTE: Good topper for grilled mahimahi, swordfish, tuna or salmon.

For the freshest flavor and texture, serve the salsa within 1 hour of preparing it.
