Papaya salsa

Yield: 3 Cups

Measure Ingredient
1 Papaya, peeled, seeded and cut into 1/2-inch cubes
1 Small red chili, seeded and finely chopped
½ cup Chopped red onion
½ cup Chopped red bell pepper
¼ cup Chopped fresh mint leaves
2 tablespoons Lime juice

Mix all ingredients. Cover and refrigerate about 30 minutes or until chilled.
