Ingredients

| 3 | teaspoons | Coarse Salt |
| 1 | cup | Water |
| 2 | tablespoons | Mild vinegar |
| 1 | teaspoon | Sugar |
| ¼ | teaspoon | Cayenne pepper |
| 1 | Clove garlic, minced | |
| 1 | Spring onion, minced | |
| 3 | teaspoons | Sesame seeds, toasted & crushed |
Directions
Peel cucumbers thinly & cut across into thin slices. Place in a bowl & sprinkle with the salt and add water. Soak for 15 minutes & drain off all liquid. Combine rest of ingredients, pour over cucumbers mixing well & serve chilled.
