Oven fried chicken

Yield: 6 servings

Measure Ingredient
4 ounces Skinless,boned chicken breasts
18 \N Saltine cracker squares,crushed
2 tablespoons Parmesan cheese
¾ teaspoon Black pepper
½ teaspoon EACH: basil,celery seed,onion powder,oregano,paprika
⅜ teaspoon Salt
¼ cup Evaporated skim milk
1 tablespoon Vegetable oil

Combine cracker crumbs, cheese, black pepper, basil, celery seed, onion powder, oregano, paprika and salt in a bowl. Dip chicken in evaporated milk, then coat with crumb mixture. Place in a lightly greased shallow roasting pan. Bake in a 400 degree oven for 30 minutes. Brush with oil. Bake 10 minutes longer.

Makes 6 servings.
