Curried rice #1

Yield: 4 Servings

Measure Ingredient
2 tablespoons Butter
½ cup Chopped onion
2 cups Chicken broth
⅛ teaspoon Pepper
1 teaspoon Salt
1 teaspoon Curry powder
1 \N Lemon; juice of
2 tablespoons Parsley flakes
1 dash Paprika
1 cup Uncooked rice

Melt butter in 2-quart saucepan; add onion, cooking slowly until tender.

Combine broth, salt, pepper, curry powder, lemon juice and parsley; add to onion and bring to a boil. Add rice, cover and cook over low heat for 20 minutes. Remove from heat, set aside for 10 minutes. Garnish with paprika.
