Oatmeal filled cookies

Measure Ingredient
¾ cup Melted shortening
2 cups Quick cooking oatmeal
2 cups Flour
1 teaspoon Vanilla
1 cup Brown sugar
1 teaspoon Soda
¾ cup Sugar
2 Eggs
1 tablespoon Butter
¼ teaspoon Salt
1 cup Chopped pineapple
2 tablespoons Flour
1 teaspoon Vanilla

FILLING

Blend shortening with brown sugar. Sift flour and soda together and mix with oatmeal. Blend the dry mixture and vanilla into brown sugar and shortening mixtures, working into dough with hands. Press half this mixture on bottom of well greased pan. Add filling and then press other half on top. Cool until thick, add vanilla when partly cooked. Bake at

375 degrees for 25 minutes.
