New orleans rice pudding

Ingredients

| 1 | cup | Uncooked rice |
| 1 | quart | Milk |
| 8 | tablespoons | Butter |
| ¾ | cup | Sugar |
| 1 | teaspoon | Vanilla extract |
| ½ | cup | Raisins |
| 5 | Eggs (beaten) | |
| 1 | teaspoon | Cinnamon |
Directions
Combine rice and milk. Bring to a boil, cover and cook over low heat until rice is tender and has absorbed most of the milk. Add butter, sugar, vanilla, raisins and eggs. Turn into a buttered 2-quart casserole dish. Sprinkle with cinnamon. Bake at 350 for 25 minutes.
Serves 6-8.
