Mushroom trio

Measure Ingredient
200 grams Enoki mushrooms
200 grams Shitake mushrooms
200 grams Oyster; (abalone) mushrooms
2 teaspoons Sesame oil
1 tablespoon Peanut oil; (or other lightly
\N \N ; flavoured oil)
2 tablespoons Finely chopped onion
2 teaspoons Finely chopped ginger
2 teaspoons Finely chopped garlic
2 tablespoons Salt reduced soya sauce
4 tablespoons Mirrin
¼ teaspoon White pepper
100 grams Snow peas; blanched
250 grams Cooked thin spaghetti; (such as capellini)

In a hot wok or large frying pan over high heat, put the two oils.

Stir in onion and when softened, add ginger and garlic.

Toss in the mushrooms, a few at a time, stirring constantly.

After a couple of minutes, when they have softened a little, add soya sauce.

Stir allowing excess moisture to evaporate off.

Add mirrin and white pepper and keep stirring.

Stir in spaghetti and snow peas.

Serve immediately in a warmed bowl.
