|200 grams||Enoki mushrooms|
|200 grams||Shitake mushrooms|
|200 grams||Oyster; (abalone) mushrooms|
|2 teaspoons||Sesame oil|
|1 tablespoon||Peanut oil; (or other lightly|
|\N \N||; flavoured oil)|
|2 tablespoons||Finely chopped onion|
|2 teaspoons||Finely chopped ginger|
|2 teaspoons||Finely chopped garlic|
|2 tablespoons||Salt reduced soya sauce|
|¼ teaspoon||White pepper|
|100 grams||Snow peas; blanched|
|250 grams||Cooked thin spaghetti; (such as capellini)|
In a hot wok or large frying pan over high heat, put the two oils.
Stir in onion and when softened, add ginger and garlic.
Toss in the mushrooms, a few at a time, stirring constantly.
After a couple of minutes, when they have softened a little, add soya sauce.
Stir allowing excess moisture to evaporate off.
Add mirrin and white pepper and keep stirring.
Stir in spaghetti and snow peas.
Serve immediately in a warmed bowl.
