Moscow potato salad

And diced
4Boneless chicken breast
Halves, coked & diced
1largeCucumber, seeded, diced
2Hard cooked eggs, chopped
4teaspoonsFresh snipped dill
2teaspoonsSalt
¼teaspoonBlack pepper
Lettuce leaves
1cupMayonnaise

Directions

The idaho Potato commission obtained this recipe on a trip to Moscow.

Cook potatoes in water until tender. Drain. In a large bowl toss potatoes with chciken, cucumbers and eggs, dill, salt and pepper.

Line a large platter with lettuce leaves and dome on mixture. Spread with mayonnaise to completely cover salad dome.
