Red potato salad

Ingredients

½cupCottage cheese, low fat
¾cupYogurt, plain low-fat
¼cupRed wine vinegar
3teaspoonsPrepared mustard
3teaspoonsLemon juice
1tablespoonTamari soy sauce
teaspoonPepper
½cupCelery, chopped
¼cupOnion, chopped
½cupGreen onion, chopped

Directions

*1 This should be about 6 cups after cooking.

Cover potatoes with water in saucepan and bring to boil, cooking 25-35 minutes or until tender.

Place cottage cheese, yogurt, vinegar, mustard, lemon juice, Tamari and pepper in food processor and mix until smooth.

Mix celery, onion, and green onion with potatoes. Pour dressing over mixture and toss to coat. (while still warm) Chill
