Red potato salad

Yield: 6 servings

Measure Ingredient
4 mediums Red Potatoes, quartered *1
½ cup Cottage cheese, low fat
¾ cup Yogurt, plain low-fat
¼ cup Red wine vinegar
3 teaspoons Prepared mustard
3 teaspoons Lemon juice
1 tablespoon Tamari soy sauce
⅛ teaspoon Pepper
½ cup Celery, chopped
¼ cup Onion, chopped
½ cup Green onion, chopped

*1 This should be about 6 cups after cooking.

Cover potatoes with water in saucepan and bring to boil, cooking 25-35 minutes or until tender.

Place cottage cheese, yogurt, vinegar, mustard, lemon juice, Tamari and pepper in food processor and mix until smooth.

Mix celery, onion, and green onion with potatoes. Pour dressing over mixture and toss to coat. (while still warm) Chill
