Moroccan marinade

½cupFinely-chopped red bell pepper; (optional)
2teaspoonsFinely-chopped jalapeno pepper
6tablespoonsFinely-chopped fresh cilantro
¼cupFinely-chopped fresh parsley
Juice of 3 lemons, strained
Grated peel (no white attached) of 2 lemons
Grated peel (no white attached) of 2 oranges
1teaspoonTurmeric
2teaspoonsSaffron
1teaspoonGround coriander
1teaspoonPaprika
1teaspoonGround cinnamon
2teaspoonsCumin seeds
Salt and freshly-ground black pepper

Directions

In a large bowl, combine all ingredients. Season to taste with salt and pepper.

Yield: 1½ cups
