Moroccan marinade

Yield: 1 Servings

Measure Ingredient
1 large Onion,; finely chopped
6 \N Garlic cloves,; peeled and finely chopped
½ cup Finely-chopped red bell pepper; (optional)
2 teaspoons Finely-chopped jalapeno pepper
6 tablespoons Finely-chopped fresh cilantro
¼ cup Finely-chopped fresh parsley
\N \N Juice of 3 lemons, strained
\N \N Grated peel (no white attached) of 2 lemons
\N \N Grated peel (no white attached) of 2 oranges
1 teaspoon Turmeric
2 teaspoons Saffron
1 teaspoon Ground coriander
1 teaspoon Paprika
1 teaspoon Ground cinnamon
2 teaspoons Cumin seeds
\N \N Salt and freshly-ground black pepper

In a large bowl, combine all ingredients. Season to taste with salt and pepper.

Yield: 1½ cups
