Moroccan marinade

| ¼ | cup | Finely-chopped fresh parsley |
| Juice of 3 lemons, strained | ||
| Grated peel (no white attached) of 2 lemons | ||
| Grated peel (no white attached) of 2 oranges | ||
| 1 | teaspoon | Turmeric |
| 2 | teaspoons | Saffron |
| 1 | teaspoon | Ground coriander |
| 1 | teaspoon | Paprika |
| 1 | teaspoon | Ground cinnamon |
| 2 | teaspoons | Cumin seeds |
| Salt and freshly-ground black pepper | ||
Directions
In a large bowl, combine all ingredients. Season to taste with salt and pepper.
Yield: 1½ cups
