Mock hollandaise sauce

| 1 | tablespoon | Cornstarch |
| 1 | cup | Chicken stock |
| 4 | teaspoons | Freshly squeezed lemon juice |
| 2 | tablespoons | Soft margarine |
| ¼ | cup | Grated low-fat cheese |
Directions
Mix cornstarch with a little broth to a smooth paste. Add the remaining broth, lemon juice and margarine. Heat slowly to boiling, stirring constantly.
