Mock hollandaise sauce

1cupChicken stock
4teaspoonsFreshly squeezed lemon juice
2tablespoonsSoft margarine
¼cupGrated low-fat cheese

Directions

Mix cornstarch with a little broth to a smooth paste. Add the remaining broth, lemon juice and margarine. Heat slowly to boiling, stirring constantly.
