Mock hollandaise

Yield: 4 servings

Measure Ingredient
2 \N Eggs, beaten
¼ cup Cream
⅛ teaspoon Salt
⅛ teaspoon Cayenne
⅛ teaspoon Nutmeg
1 tablespoon Lemon juice
2 tablespoons Butter, melted

In a double boiler, mix and cook the first 6 ingreds, stirring constantly until thickened. Then slowly stir in the butter. Stir until thick and serve.
