Miller's calzone

Ingredients

3 | cups | All-purpose flour |
1 | cup | Whole wheat flour |
1¼ | teaspoon | Salt |
1½ | cup | Ricotta cheese |
¼ | cup | Parmesan cheese |
1 | x | Salt & Pepper to taste |
⅓ | cup | Margarine |
⅓ | cup | Shortening |
1 | x | Buttermilk, as needed |
¼ | teaspoon | Thyme |
1 | each | Egg, beaten |
1 | cup | Ham, diced |
Directions
PASTRY
FILLING
PASTRY: In mixing bowl, measure flour and salt together. Quarter margarine and shortening into cubes and add to bowl. Work the dough by hand, adding buttermilk a tablespoon at a time until kneaded to a pliable dough consistency. Cover and refrigerate.
FILLING: In mixing bowl, combine all ingredients. Take dough and divide it into 6 equal balls. On floured surface, roll out dough to ¼" thickness. Place ⅙ of the filling mixture on dough and fold dough in half, forming a half-moon shape. Pinch edges together and prick dough with a fork. Repeat until all are filled. Placed on greased baking sheet and bake in a 350-degree oven approximately 20 minutes.
