Calzone

Measure Ingredient
2½ kilograms Pizza dough
2 kilograms Mozzarella
Litres tomato sauce
800 grams Ham sliced
15 Eggs

Spread dough to 30 cm size. Cover ½ the dough with tomato sauce, then mozzarella then ham and 1 raw egg. Sprinkle with a little salt and pepper. Seal dough. Brush lightly with tomato sauce. Cook and serve. Source: Given to share with the express permission of Chef de Cuisine
